I have noticed that several of the models have an AR + SB that is over 10. If I'm stuck in base to base with one of them how do I get around this (other than any special attack bonuses)?
Is there a way other than a special ability to get out of melee combat?
Defending rolls - I only have to decided how many attacks I'm going to defend against and not what rolls are defending what attacks. I would then make my rolls and then cancel out attacks starting with the lowest going up?

I think you are adding both stats together and that is an error. The AR +SB is factored into the second stat. The shield usually only grants a +1 bonus. It should be the second stat printed next to the base AR. Thus you use the adjusted value against attacks and the base value against damage.
IE two stats would read: AR: 5 SB: 6
so the AR + SB is 6 and the base AR is 5.
As far as getting out of melee you just move out and hope you don't get hit.

Thanks for the help. I see where I was going wrong with AR and SB. With my first real game happening today I'm sure I'll get an answer to my question about defending rolls and maybe a few more questions for the forum.
